Flattening stone for your whetstones

A whetstone does not wear evenly. You use the middle most, and after a while the stone is dished — and then you can no longer grind a straight edge, no matter how good your technique is. That is what a flattening stone solves.

This one has grooves in the surface. They do two things: they cut into the whetstone faster, and they channel the slurry away so you are not working in a paste. You simply rub the flattener against the wet whetstone until the surface is level again.

KAI recommends doing it regularly rather than rarely — it takes a minute when the stone is only slightly dished, and much longer once the damage is done. Part of the Seki Magoroku series.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
