Description & specifications
The Konosuke Sumiiro Bunka SLD 180 mm is an outstanding knife that combines traditional craftsmanship with modern technology. It is made in Sanjo, Niigata, and has a core of semi-stainless SLD tool steel, which gives an edge that lasts and a patina that develops beautifully over time. It is easy to sharpen and resists rust better than carbon steel.
With its elegant kurouchi/nashiji finish and the brightly polished edge, this knife is not only functional but also a pleasure to look at. The luxurious handle in Khii ebony gives a firm grip and adds a touch of elegance to your kitchen.
Made by the skilled smith Takahiro Nihei, who has a background at Yoshikane Hamono, this knife is the result of careful craftsmanship and a passion for quality. Takahiro opened his own workshop in 2019 and continues to deliver knives of the highest standard.

To ensure the knife's long-lasting sharpness and quality, we recommend avoiding cutting bones and frozen food. The knife must not be washed in a dishwasher, as this can harm its sharpness and cause rust, even in stainless alloys.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
